Why Does Popcorn Pop?
Have you ever watched popcorn jump and pop inside a pan or microwave? The first time I made popcorn at home, I noticed that each piece popped at a different time. Some popped quickly, while others took a little longer. It made me wonder what was happening inside each tiny popcorn kernel. The answer is a fascinating piece of everyday science!
A Tiny Drop of Water Inside
Every popcorn kernel contains a small amount of water trapped inside its hard outer shell called the pericarp. It also contains soft starch inside the kernel (corn). Although the water is only a small part of the kernel, it plays the most important role in making popcorn pop.
Heat Builds Pressure
When the popcorn is heated, the water inside changes into steam. Because the outer shell is very strong, the steam cannot escape. As more heat is added, the pressure inside the kernel continues to increase. Eventually, the pressure becomes too great for the shell to hold.
Pop!
At about 180°C (356°F), the hard outer shell suddenly breaks open with the familiar "pop!" sound. At the same moment, the hot starch expands very quickly and cools almost instantly. This creates the soft, white, fluffy popcorn that we enjoy eating. It may happen in less than a second, but several scientific processes take place during that tiny moment.
Why Doesn't Every Type of Corn Pop?
Only a special variety of corn can become popcorn. Popcorn kernels have a hard outer shell and the right amount of moisture inside. Other types of corn, such as sweet corn, do not build enough pressure, so they cannot pop in the same way.
